Charmaine Solomon’s Famous Butter Chicken

Serves:6

Ingredients:

750gms chicken thigh fillets, diced, or 6 thigh cutlets

½ jar of Charmaine Solomon’s Butter Chicken Marinade

3 Tablespoons ghee or oil

1 can diced tomatoes or 1 cup tomato puree

2 tablespoons sugar

½ cup cream

sprigs of coriander sprigs

Method:

Heat the ghee or oil in a heavy-based frying pan or pot, and brown the chicken on all sides.

Add the Butter Chicken Marinade and coat the chicken well. Once fragrant, add the tomatoes and simmer until the chicken is cooked. Add cream and sugar and stir until combined. Bring to temperature.

Serve with sprigs of coriander and cucumber raita.
