Vegetarian Laska Soup

Serves 2

Ingredients:

1.25 L of water

100g rice vermicelli

1/3 jar of Charmaine Solomon’s Vegetarian Laska Paste

1 cup frozen or fresh beans or mixed vegetables (zucchini, pumpkin, bok choy, mushrooms, capsicum, cauliflower, broccolini, snow peas)

1/3 cup coconut milk

For serving:

sliced fried tofu, fresh bean sprouts, strips of cucumber, coriander, spring onions, boiled egg, fried shallots

Method:

Bring the water to the boil, add Vegetarian Laska Paste to the boiling water.

Add the vegetables to the broth and cook until tender, then stir in the coconut milk.
Add vermicelli noodles to the broth.

Scoop noodles into the bowls, then add the vegetables and the broth.

Top with the tofu, bean sprouts, cucumber, coriander, and other serving suggestions if using.

Serve with extra coconut milk on the side for the faint-hearted.
