Cucumber Raita

Ingredients:

2 teaspoons of minced garlic

2 teaspoons of salt

1 cup natural yoghurt

1 long seedless cucumber, grated

2 teaspoons of herbs, dill, mint, or coriander

Method:

Grate the cucumber, sprinkle with salt to remove the juice from the cucumber and set aside in a colander to drain for approx 5 mins.

In a bowl, mix the yogurt, garlic and herbs.

When the cucumber has drained, mix with the yoghurt.

Serve chilled as an accompaniment with a curry.
