Moroccan Fruity Rice Pilaf

Ingredients:

60g of butter or 2 tablespoons olive oil

2 onions, finely chopped

2 teaspoons Charmaine Solomon’s Moroccan Spice Blend

2 cups long-grain rice

½ cup chopped apricots

½ sultanas

¼ currants

3 cups water

1 teaspoon salt

Method:

Melt butter in a heavy-based saucepan, add onions and garlic, and cook until soft and translucent.

Add rice and coat with the onion and garlic mixture.

Add the spice blend, dried fruits and salt. Then, when fragrant, add the water.

Cover and simmer on a low heat for 15 minutes. Uncover and ensure that the rice is tender and all the liquid has been absorbed.

Serve with slow cooked l;am, poultry or vegetable dishes.
